Mycotoxins production by fungi isolated from underground and root vegetables
Summary.

Mycological tests of selected root vegetables (carrot) and tuber vegetables (beetroots, potatoes) were carried out between July 2008 and April 2009. Once a month, 1 kg of each of these vegetables was bought from three different suppliers at Nowy Kleparz square in Cracow. The tests revealed different counts of microscopic fungi (Micromycetes) present in the tested material. The highest concentration of fungi was shown in carrots and beetroots, and the lowest – in potatoes. Apart from the qualitative analysis, taxonomic tests were carried out. They revealed the presence of 26 species of fungi, of which 11 were potentially able to produce toxins. All isolated strains (96) of potentially toxin-producing species were examined in biological tests in order to determine which strains produce specific metabolites – mycotoxins. It was established that only 40% of the tested metabolites can be considered toxic. The metabolites of remaining strains showed no toxic properties.
