Influence of gamma irradiation of dry bean seeds (Phaseolus vulgaris L.) on their phenolics content and antiradical activity
Summary.

Seeds of five bean cultivars were irradiated at doses of 3 and 10 kGy. The content of total phenolics, flavonols, anthocyanins and condensed tannins was analysed in ethanolic extracts. Antiradical activity against DPPH radicals was measured using the Electron Paramagnetic Resonance method. Irradiation of bean seeds only slightly decreased the total phenolics (at dose
3 kGy) or tannin content, and in greater extent flavonols and anthocyanins. The free radicals were initially faster scavenging by extracts from irradiated beans than by the extracts from raw seeds. However, the final values (after 60 min) were similar.
