Contents of minerals in corn extrudates with dried oyster (Pleurotus ostreatus) mushrooms and sorption of iron, copper and zinc by these products
Abstract.

The aim of this study was to assess the mineral composition of extrudates with the addition of dried oyster and to estimate the capacity to bind iron, copper and zinc by these products under conditions of pH values similar to those found in the human alimentary tract. The experimental material consisted of extrudates with a 10% and 20% addition of dried oyster. Contents of minerals were analysed by atomic absorption spectrophotometry. Sorption of iron, copper and zinc was estimated under in vitro conditions (simulated to imitate those in the alimentary tract), using buffer solutions with pH 1.8 and 8.7 as dispersion media. It was found that the products were characterized by high contents of iron, copper, magnesium and potassium, and low contents of sodium and calcium. Sorption of minerals was different and depended on kind of minerals and pH medium. Results of tests suggest that the products could be used as a food additive, however, in order to promote them as a good source of microelements, it is necessary to determine the sorption capacity of dried mushrooms in in vivo tests.
